Hearty Deer Meat Stew
Hearty Deer Stew Recipe
Ingredients:
- 2 lbs deer meat (cut into bite-sized pieces)
- 2 tbsp olive oil
- 1 large onion (chopped)
- 3 cloves garlic (minced)
- 3 carrots (sliced)
- 3 potatoes (cubed)
- 2 stalks celery (sliced)
- 1 cup mushrooms (sliced)
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 tbsp tomato paste
- 1 bay leaf
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- Fresh parsley (chopped for garnish)
Instructions:
- Sear the Meat: Heat olive oil in a large pot over medium-high heat. Add the deer meat and sear until browned on all sides. Remove the meat and set it aside.
- Sauté Vegetables: In the same pot, add the onions and garlic. Sauté until the onions are translucent. Add the carrots, potatoes, celery, and mushrooms. Cook for another 5 minutes, stirring occasionally.
- Add Liquids and Seasonings: Pour in the beef broth and red wine (if using). Stir in the tomato paste, bay leaf, thyme, and rosemary. Season with salt and pepper.
- Simmer: Return the deer meat to the pot. Bring the stew to a boil, then reduce the heat to low. Cover and simmer for about 2 hours or until the meat is tender and the flavors are well combined.
- Serve: Remove the bay leaf. Taste and adjust seasoning as needed. Ladle the stew into bowls and garnish with fresh parsley.
